Have you tried annual theatre almanacks, like "The Era Almanack," Frederic Meyer's "International Almanack," or "The Dramatic and Musical Directory of the United Kingdom"? I'm fairly certain that the second of these contains seating plans for all the major theatres in Europe (including, presumably, the Lyceum). Don't know if they provide information on the stage and backstage areas, although my guess would be that they do, since they were designed for use by tour managers. "The Era Almanack" ran from 1868 to 1919; the "Dramatic and Musical Directory" ran from 1883 to 1893. The British Library holds all three; the Theatre Museum may hold copies as well. You could search WorldCat for US libraries and then pursue interlibrary loan (a long shot for rare material, though). I'll be consulting these almanacks next month on a visit to London and can report back in greater detail after then. Also, would Irving or the Lyceum Theatre Company have been required to file plans or blueprints with the London County Council? That might be worth following up on.
