The best, perhaps the only, source that I know is in Bram Stoker's two volume work "Personal Reminiscences of My Life with Henry Irving." You have to dig the info out, but he does have a bit on finance, how accounting was organized, and even a partial list of the number and type of employees, including orchestra and etc, required. A small section on HI's finances.
